Surf and Turf

One of the best dishes you can make with your Alma Cookware!

 

Ingredients:

For the Steak:

  • 2 boneless ribeye steaks (or your preferred cut)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 2 sprigs fresh rosemary

For the Shrimp:

  • 12 large shrimp, peeled and deveined
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish

Instructions:

For the Steak:

  1. Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

  2. Preheat your oven to 400°F (200°C).

  3. Season the steaks generously with salt and pepper on both sides.

  4. Heat a cast-iron skillet over high heat until it's smoking hot. Add the olive oil and swirl it around to coat the bottom of the skillet.

  5. Carefully place the seasoned steaks into the hot skillet. Sear for about 2-3 minutes on each side until a nice crust forms. While searing, add the minced garlic and rosemary sprigs to the skillet, and baste the steaks with the melted butter.

  6. Once the steaks are seared, transfer the skillet to the preheated oven. Roast for 5-7 minutes for medium-rare, or longer if you prefer your steak more well-done. Use a meat thermometer to check for your desired doneness: 135°F (57°C) for medium-rare, 145°F (63°C) for medium, and 160°F (71°C) for well-done.

  7. Remove the skillet from the oven and let the steaks rest for about 5 minutes. This allows the juices to redistribute and keeps the steaks juicy.

For the Shrimp:

  1. While the steaks are resting, use the same cast iron skillet to cook the shrimp. Heat the skillet over medium-high heat.

  2. Add the butter to the skillet and let it melt. Then add the minced garlic and sauté for about 30 seconds until fragrant.

  3. Add the peeled and deveined shrimp to the skillet. Cook for about 2-3 minutes on each side until they turn pink and opaque.

  4. Squeeze the lemon juice over the shrimp and sprinkle with lemon zest. Season with salt and pepper to taste.

To Serve:

Place the cooked shrimp on top of the rested steaks in the cast iron skillet. Garnish with fresh chopped parsley. Serve immediately, and enjoy your delicious cast iron surf and turf!

You can also serve this dish with your choice of sides, such as roasted vegetables, mashed potatoes, or a crisp salad.
